Make this simple, creamy sweet potato casserole, a classic comfort food side dish perfect for holiday meals or any family dinner. You can choose between a gooey marshmallow topping or a crunchy pecan streusel.

Ingredients

Scale
  • 2 (15 ounce) cans sweet potatoes, drained and mashed (or 3 cups fresh mashed sweet potatoes)
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • For Marshmallow Topping: 1 bag (10 ounces) miniature marshmallows
  • For Pecan Streusel Topping: 1/2 cup all-purpose flour
  • For Pecan Streusel Topping: 1/2 cup packed light brown sugar
  • For Pecan Streusel Topping: 1/3 cup (about 5 tablespoons) cold unsalted butter, cut into pieces
  • For Pecan Streusel Topping: 1 cup chopped pecans

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, melted butter, eggs, salt, vanilla extract, and milk. Mix until the ingredients are just combined and smooth. Do not overmix.
  3. Pour the sweet potato mixture evenly into the prepared baking dish.
  4. Prepare your chosen topping. For the Marshmallow Topping: Sprinkle the miniature marshmallows evenly over the sweet potato mixture. For the Pecan Streusel Topping: In a separate bowl, combine the flour and brown sugar. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Stir in the chopped pecans. Sprinkle this mixture evenly over the sweet potato base.
  5. Bake for 25 to 30 minutes. If using the marshmallow topping, watch closely during the last few minutes to prevent burning. If using the pecan streusel, bake until the topping is golden brown and the filling is hot throughout.
  6. Remove from the oven and let it cool for 10 minutes before serving. This recipe is a great alternative to relying on meal planning services for holiday sides.

Notes

  • If you want both toppings, spread the sweet potato mixture, then sprinkle half the pecans/streusel mixture, and top with marshmallows for the last 10 minutes of baking.
  • You can prepare the sweet potato base one day ahead and keep it covered in the refrigerator. Add the topping just before baking.
  • This dish pairs well with main courses often found in a keto meal plan delivery, offering a sweet counterpoint.
