Ingredients
Scale
1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup chicken broth
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Cut the chicken into uniform 1-inch pieces. Pat the pieces dry with paper towels.
In a bowl, toss the chicken pieces with salt, pepper, garlic powder, and paprika until evenly coated.
Heat the olive oil in a large skillet over medium-high heat.
Add the seasoned chicken to the hot skillet in a single layer, avoiding overcrowding. Cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the butter to the same skillet. Once the butter melts, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the sauce simmer for 1 minute.
Return the cooked chicken bites to the skillet. Toss gently to coat the chicken completely in the garlic butter sauce.
Remove from heat. Garnish with fresh chopped parsley before serving.
Notes
For crispier bites, cook the chicken in two batches rather than overcrowding the pan.
This recipe pairs well with rice or steamed vegetables for a complete meal. If you are looking for structured eating, consider using this as a base for your weekly meal planning.
You can substitute chicken thighs for breasts if you prefer a richer flavor.
