1.5 lbs sirloin steak or New York strip steak, cut into 1-inch cubes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 cloves garlic, minced
1/2 cup unsalted butter
1 tablespoon fresh parsley, chopped
1 teaspoon lemon juice (optional)
Instructions
Pat the steak cubes dry with paper towels. Season generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add steak cubes in a single layer, ensuring not to overcrowd the pan. Sear for 1-2 minutes per side until browned. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C). Remove steak from skillet and set aside.
Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
Return the steak bites to the skillet. Toss to coat in the garlic butter sauce. Cook for another 1-2 minutes until heated through.
Stir in chopped parsley and lemon juice, if using.
Serve immediately.
