  • 1/2 cup fresh basil, chopped
  • 1/4 cup fresh chives, chopped

  • 1 cup plain Greek yogurt

Instructions

  1. Prepare the dressing: In a bowl, whisk together Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper until smooth.
  2. Chop the cabbage and cucumber very finely.
  3. Chop the fresh herbs: parsley, basil, and chives.
  4. In a large bowl, combine the chopped cabbage, cucumber, parsley, basil, and chives.
  5. Add the pepitas and diced avocado to the salad.
  6. Pour the dressing over the salad and toss gently to combine.
  7. For meal prep, store the salad and dressing separately in airtight containers in the refrigerator. The salad will last up to 3 days.

Notes

  • For a thinner dressing, add a tablespoon of water.
  • You can substitute the Greek yogurt with silken tofu for a vegan option.
  • This salad is a great option for meal planning, similar to what you might find with some meal delivery companies.
  • The salad can be stored for up to 3 days in the refrigerator when dressing is kept separate.
