Make this hearty, flavorful ground beef goulash on a busy weeknight. This easy recipe uses simple pantry ingredients and cooks up fast on the stovetop for a comforting family meal.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons sweet paprika
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 12 ounces egg noodles
  • 1/2 cup sour cream (for serving, optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain off any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic, salt, pepper, and sweet paprika. Cook for 1 minute until fragrant.
  3. Stir in the tomato paste and cook for 1 minute.
  4. Pour in the beef broth and add the diced tomatoes and dried thyme. Bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 10 minutes to allow the flavors to meld.
  5. Increase the heat to medium-low and stir in the egg noodles. Cook uncovered according to the package directions, usually 6 to 8 minutes, stirring occasionally to prevent sticking, until the noodles are tender and most of the liquid is absorbed.
  6. Remove the pot from the heat. If using, stir in the sour cream until fully incorporated for a creamier texture.
  7. Serve the ground beef goulash hot, garnished with fresh parsley.

Notes

  • For a deeper flavor, use smoked paprika along with the sweet paprika.
  • If you prefer a thicker stew, remove the lid for the last 5 minutes of cooking the noodles.
  • This recipe is a great budget friendly beef meal; feel free to add frozen mixed vegetables during the last 10 minutes of simmering.
