Make this easy ground beef stir fry skillet meal in under 30 minutes. It is a flavorful, family-friendly dinner that uses simple ingredients and comes together fast.

  • 1 pound ground beef (85/15 recommended)
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1/2 cup sliced bell pepper (any color)
  • 1/4 cup low-sodium soy sauce or tamari for gluten free
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Cooked rice or noodles, for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground beef to the skillet. Break the meat apart with a spoon and cook until browned. Drain off any excess grease.
  3. Add the chopped onion and cook for 3 minutes until softened.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. Add the broccoli, carrots, and bell pepper to the skillet. Stir fry for 4 to 5 minutes until the vegetables are tender-crisp.
  6. In a small bowl, whisk together the soy sauce, oyster sauce (if using), and brown sugar. Pour this sauce mixture over the beef and vegetables.
  7. Bring the mixture to a simmer. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens slightly, about 1 minute.
  8. Remove from heat and stir in the sesame oil.
  9. Serve immediately over your choice of cooked rice or noodles.

Notes

  • For a healthier option, substitute cauliflower rice for traditional rice.
  • If you prefer a spicier flavor, add 1/2 teaspoon of red pepper flakes when you add the garlic and ginger.
  • You can prepare the sauce mixture ahead of time and store it in the refrigerator for up to 3 days.
