1 pound ground beef (85/15 recommended)
1 tablespoon vegetable oil
1 small onion, chopped
2 cloves garlic, minced
1 cup broccoli florets
1 cup sliced carrots
1/2 cup sliced bell pepper (any color)
1/4 cup low-sodium soy sauce or tamari for gluten free
2 tablespoons oyster sauce (optional)
1 tablespoon brown sugar
1 teaspoon grated fresh ginger
1/2 teaspoon sesame oil
1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
Cooked rice or noodles, for serving
Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground beef to the skillet. Break the meat apart with a spoon and cook until browned. Drain off any excess grease.
Add the chopped onion and cook for 3 minutes until softened.
Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
Add the broccoli, carrots, and bell pepper to the skillet. Stir fry for 4 to 5 minutes until the vegetables are tender-crisp.
In a small bowl, whisk together the soy sauce, oyster sauce (if using), and brown sugar. Pour this sauce mixture over the beef and vegetables.
Bring the mixture to a simmer. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens slightly, about 1 minute.
Remove from heat and stir in the sesame oil.
Serve immediately over your choice of cooked rice or noodles.
Notes
For a healthier option, substitute cauliflower rice for traditional rice.
If you prefer a spicier flavor, add 1/2 teaspoon of red pepper flakes when you add the garlic and ginger.
