1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth

8 ounces penne pasta (or similar short pasta)
2 cups fresh spinach
1 cup shredded mozzarella cheese

Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
Pour in the tomato sauce, diced tomatoes (with their juice), chicken broth, Italian seasoning, salt, and pepper. Stir to combine.
Bring the mixture to a boil. Once boiling, add the dry pasta to the pot. Stir well to prevent sticking.
Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally during cooking.
Remove the pot from the heat. Stir in the fresh spinach until it wilts into the sauce.
Stir in the mozzarella cheese and Parmesan cheese until the sauce is creamy and melted.
