A simple and delicious cheesy hash brown casserole, perfect for potlucks, holidays, or any family meal. This comforting side dish is easy to prepare and always a crowd-pleaser.

  • 1 (32 ounce) package frozen shredded hash brown potatoes, thawed
  • 1 can (10.5 ounce) condensed cream of chicken soup
  • 1 pint (16 ounce) sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup melted butter
  • 1/2 cup finely crushed cornflake crumbs (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the thawed hash brown potatoes, condensed cream of chicken soup, sour cream, and shredded cheddar cheese. Mix well until all ingredients are evenly distributed.
  3. Pour the mixture into a greased 9×13 inch baking dish.
  4. If using, sprinkle the melted butter evenly over the top of the potato mixture.
  5. If desired, sprinkle the crushed cornflake crumbs over the buttered top for a crispy finish.
  6. Bake for 45-60 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Let stand for 5-10 minutes before serving.
