Make this moist, naturally sweetened chocolate banana bread using almond flour for a gluten-free and satisfying treat. It is simple to mix up and perfect for breakfast or a snack.

Ingredients

  • 3 large very ripe bananas, mashed
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips (sugar-free or low sugar)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a standard 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, combine the mashed bananas, maple syrup, melted coconut oil, eggs, and vanilla extract. Mix until just combined.
  3. In a separate medium bowl, whisk together the almond flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently until you have a smooth batter. Do not overmix.
  5. Fold in half of the chocolate chips.
  6. Pour the batter into the prepared loaf pan. Sprinkle the remaining chocolate chips over the top.
  7. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  8. Let the bread cool in the pan for 15 minutes before carefully transferring it to a wire rack to cool completely before slicing.

Notes

  • For a lower sugar option, substitute the maple syrup with 1/2 cup of date paste.
  • You can use oat flour instead of almond flour for a different texture, but the bread will not be gluten free.
  • This bread freezes well; wrap individual slices tightly before freezing.
