  • 2 large eggs

  • 1/4 teaspoon black pepper
  • 1/4 cup shredded sharp cheddar cheese (optional, for flavor)
  • 1 tablespoon chopped fresh chives or green onion
  • Cooking spray or oil for the waffle iron

Instructions

  1. Prepare your waffle iron according to the manufacturer’s directions and lightly coat the plates with cooking spray or oil.
  2. In a large bowl, whisk together the oat flour, rolled oats, baking powder, salt, and pepper.
  3. In a separate bowl, combine the cottage cheese, eggs, and milk. Mix until mostly smooth; a few small lumps of cottage cheese are fine.
  4. Add the wet ingredients to the dry ingredients. Mix until just combined. Do not overmix the batter.
  5. Gently fold in the shredded cheddar cheese and chopped chives, if using.
  6. Pour the batter onto the hot waffle iron, using the amount recommended for your specific appliance.
