4 pounds apples (a mix of sweet and tart varieties like Fuji, Gala, Honeycrisp, and Granny Smith)
1 cup water
1/2 cup granulated sugar (adjust to taste)
1 teaspoon ground cinnamon
1 tablespoon lemon juice (optional, for brightness)
Instructions
Wash and core the apples. You can peel them for a smoother sauce or leave the skins on for added color and nutrients (you can strain them out later if desired). Cut the apples into quarters or eighths.
Place the apple pieces in a large pot or Dutch oven. Add the water, sugar, and cinnamon. If using, add the lemon juice.
Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 20-30 minutes, or until the apples are very tender. Stir occasionally to prevent sticking.
Once tender, remove the pot from the heat. Use a potato masher for a chunky texture, or an immersion blender or food mill for a smoother consistency. If you left the skins on and want a smoother sauce, you can strain the applesauce through a sieve after blending.
Taste and adjust sweetness or cinnamon as needed.
Serve warm or let cool completely before storing.

Unsweetened applesauce can be made by omitting the sugar.
