  • 1 1/2 cups warm water (105-115°F)
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 2 tablespoons olive oil, plus more for greasing
  • 1 teaspoon salt
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 8 ounces low-moisture mozzarella cheese, shredded
  • 2 ounces Parmesan cheese, grated

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Add flour, olive oil, and salt to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Lightly grease a clean bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. While the dough rises, prepare the sauce. In a small bowl, combine tomato sauce, oregano, garlic powder, and black pepper. Stir well.
  6. Preheat your oven to 475°F (245°C). If using a pizza stone or steel, place it in the oven while it preheats. If using a baking sheet, you can preheat it as well.
  7. Punch down the risen dough and turn it out onto a lightly floured surface.
  8. Shape the dough into a 12-inch circle. You can stretch it by hand or use a rolling pin.
  9. Carefully transfer the dough to a pizza peel dusted with cornmeal or onto a piece of parchment paper. If using a baking sheet, place the dough directly onto the sheet.
  10. Spread the sauce evenly over the dough, leaving a small border for the crust.
  11. Sprinkle the mozzarella and Parmesan cheeses over the sauce.
  12. Carefully slide the pizza onto the preheated pizza stone or steel, or place the baking sheet in the oven.
  13. Bake for 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. For extra browning, you can broil for the last minute, watching carefully to prevent burning.
  14. Remove the pizza from the oven and let it cool for a few minutes before slicing and serving.
