Make sweet and savory roasted carrots glazed with honey, garlic, and butter. This easy side dish caramelizes perfectly in the oven and is great for weeknight dinners or holidays.

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until combined. This mixture creates your glaze.
  3. Place the cut carrots in a large bowl. Pour the honey garlic butter mixture over the carrots and toss well until every piece is evenly coated.
  4. Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to promote caramelization.
  5. Roast for 20 to 25 minutes, tossing halfway through the cooking time. The carrots are done when they are tender when pierced with a fork and have caramelized edges.
  6. Remove from the oven. If using, sprinkle with fresh parsley before serving immediately.

Notes

  • For extra flavor, add 1/4 cup of grated Parmesan cheese during the last 5 minutes of roasting.
