A simple and glossy side dish of tender carrots coated in a sweet honey glaze, perfect for any meal.

Ingredients

  • 1.5 lbs carrots, peeled and sliced into 1/2-inch coins
  • 2 tbsp butter
  • 2 tbsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • Optional: 1 clove garlic, minced, or 1 tsp fresh rosemary

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the sliced carrots with melted butter, honey, salt, and pepper. Add optional garlic or rosemary if using.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until the carrots are tender and lightly caramelized, tossing halfway through.
  5. Serve immediately.

Notes

  • For a deeper flavor, add a pinch of cinnamon or nutmeg to the glaze.
  • If you prefer softer carrots, you can steam them for 5 minutes before glazing and roasting.
  • These carrots can be prepped ahead and glazed just before roasting.
