  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 tablespoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups cooked jasmine rice
  • 1 large ripe avocado, diced
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a medium bowl, whisk together the honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper to create the marinade.
  2. Add the chicken pieces to the marinade, toss to coat completely, and let it sit for at least 20 minutes while you prepare the rice.
  3. Cook your jasmine rice according to package directions, using chicken broth instead of water for extra flavor if desired.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 6 to 8 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  5. To assemble the stack, place one cup of warm rice onto each plate.
  6. Top the rice layer with half of the diced avocado.
