Create this incredibly creamy, no-bake Keto Peanut Butter Vanilla Swirl Fudge. This sugar-free, low-carb treat combines rich peanut butter flavor with a light vanilla ribbon for a perfect homemade candy experience.

  • 1/2 cup unsalted butter, softened
  • 1 cup natural peanut butter (creamy)
  • 1 1/4 cups powdered low-carb sweetener (like erythritol or monk fruit blend)
  • 2 teaspoons pure vanilla extract
  • 1/4 cup heavy whipping cream
  • 1/4 cup powdered low-carb sweetener (for vanilla layer)
  • 1/2 teaspoon vanilla extract (for vanilla layer)

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving an overhang for easy removal.
  2. In a microwave-safe bowl, combine the butter and 1 cup of peanut butter. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  3. Stir the 1 1/4 cups powdered sweetener and 2 teaspoons vanilla extract into the melted peanut butter mixture until well combined and creamy.
  4. Press about two-thirds of this peanut butter mixture evenly into the prepared baking dish. This forms your base layer.
  5. In a separate small bowl, combine the heavy whipping cream, 1/4 cup powdered sweetener, and 1/2 teaspoon vanilla extract. Mix until smooth. This is your vanilla swirl component.
  6. Drop small spoonfuls of the vanilla mixture over the peanut butter base. Then, dollop the remaining peanut butter mixture over the vanilla spots.
  7. Use a knife or skewer to gently swirl the two layers together to create a marbled effect. Do not overmix.
  8. Place the dish in the freezer for at least 2 hours, or until the fudge is completely firm.
  9. Lift the fudge out using the parchment overhang, place it on a cutting board, and cut into small squares. Store leftovers in an airtight container in the refrigerator.
