  • 1 leftover turkey carcass
  • 8 cups water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup cooked rice or noodles
  • 1 cup shredded leftover turkey meat
  • Salt and black pepper to taste

Instructions

  1. Place the turkey carcass in a large pot. Add water, carrots, celery, onion, garlic, thyme, and bay leaf.
  2. Bring to a boil, then reduce heat and simmer for at least 1 hour to make a flavorful broth. Strain the broth, discarding the solids.
  3. Return the broth to the pot. Add the cooked rice or noodles and shredded turkey meat.
  4. Simmer for another 15-20 minutes, or until heated through and flavors have melded.
  5. Season with salt and pepper to taste before serving.
