  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) refried beans, warmed
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sliced jalapeƱos (from a jar)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: salsa, sour cream, guacamole

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  3. Stir in the taco seasoning and water. Simmer for 5 minutes, or until the sauce has thickened.
  4. Spread the tortilla chips in a single layer on a large baking sheet.
  5. Spread the warmed refried beans evenly over the chips.
  6. Spoon the seasoned ground beef mixture over the beans.
  7. Sprinkle both shredded cheeses evenly over the beef.
  8. Scatter the sliced jalapeƱos and chopped red onion over the cheese.
  9. Bake for 8-10 minutes, or until the cheese is melted and bubbly.
  10. Remove from oven and sprinkle with fresh cilantro.
  11. Serve immediately with optional toppings like salsa, sour cream, and guacamole.
