- 1.5 lbs Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/4 cup maple syrup
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- Salt, to taste
- Black pepper, to taste
- Optional: 2 slices bacon, cooked and crumbled
- Optional: 1/4 cup toasted pecans or walnuts
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
- While the sprouts are roasting, whisk together the maple syrup, balsamic vinegar, and Dijon mustard in a small bowl.
- Once the sprouts are tender, remove them from the oven.
- Drizzle the maple glaze over the roasted Brussels sprouts and toss to coat.
- Return to the oven for 2-3 minutes to allow the glaze to thicken slightly.
- Serve immediately, garnished with crumbled bacon and toasted nuts if desired.
Notes
- For a sweeter glaze, use pure maple syrup.
- Adjust the amount of balsamic vinegar to your preference for tanginess.
- Ensure your baking sheet is large enough to avoid overcrowding the sprouts, which can lead to steaming instead of roasting.
- This recipe is a great alternative to traditional heavy holiday sides and can be part of a balanced meal plan.
