- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 1 tsp dried Italian seasoning
- Salt and black pepper to taste
- Fresh basil or parsley, chopped, for garnish
- Season chicken pieces with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
- Stir in grated Parmesan cheese and Italian seasoning. Cook until the sauce thickens, about 3-5 minutes.
- Return the chicken to the skillet and toss to coat in the sauce.
- Season with additional salt and pepper if needed.
- Garnish with fresh basil or parsley before serving.
Notes
- Serve with pasta, rice, or crusty bread to soak up the sauce.
- Chicken thighs can be used instead of breasts. Adjust cooking time as needed.
- To reheat, gently warm the sauce and chicken over low heat, adding a splash of milk or broth if it’s too thick.
