A quick and creamy chicken dish featuring sun-dried tomatoes and Parmesan cheese, perfect for a weeknight dinner.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  4. Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
  6. Stir in grated Parmesan cheese and Italian seasoning. Cook until the sauce thickens, about 3-5 minutes.
  7. Return the chicken to the skillet and toss to coat in the sauce.
  8. Season with additional salt and pepper if needed.
  9. Garnish with fresh basil or parsley before serving.

Notes

  • Serve with pasta, rice, or crusty bread to soak up the sauce.
  • Chicken thighs can be used instead of breasts. Adjust cooking time as needed.
  • To reheat, gently warm the sauce and chicken over low heat, adding a splash of milk or broth if it’s too thick.
