  • 2 lbs ground beef
  • 1 cup bread crumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/4 cup finely chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup ketchup (for meatloaf mix)
  • 3 lbs Russet potatoes, peeled and quartered
  • 1/2 cup milk (for potatoes)
  • 4 tablespoons butter
  • 1/2 teaspoon salt (for potatoes)
  • 1/4 cup shredded cheddar cheese (optional topping)
  • 1/4 cup ketchup or BBQ sauce (for glaze)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Prepare the mashed potatoes: Place potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 to 20 minutes. Drain well.
  3. Mash the cooked potatoes with 4 tablespoons of butter, 1/2 cup milk, and 1/2 teaspoon salt until smooth. Set aside.
  4. Prepare the meatloaf base: In a large bowl, combine the ground beef, bread crumbs, egg, 1/2 cup milk, chopped onion, 1 teaspoon salt, pepper, Worcestershire sauce, and 1/2 cup ketchup. Mix gently with your hands until just combined; do not overmix.
  5. Press the meatloaf mixture evenly into the bottom of the prepared baking dish. This forms your base layer.
  6. Spread the prepared mashed potatoes evenly over the meatloaf layer. Use a fork to create texture on top of the potatoes.
  7. Spread the remaining 1/4 cup ketchup or BBQ sauce over the potato topping. If using cheese, sprinkle it over the sauce now.
  8. Bake for 45 to 55 minutes, or until the meatloaf is cooked through and the topping is lightly browned. The internal temperature of the meat should reach 160 degrees Fahrenheit.
  9. Let the meatloaf potato bake rest for 10 minutes before slicing and serving.

Notes

  • For a richer flavor, substitute half the ground beef with ground pork or veal.
  • You can prepare the mashed potatoes a day ahead and store them in the refrigerator. Reheat slightly before spreading them over the meatloaf layer.
  • This makes a great freezer friendly casserole meal; assemble completely, cover tightly, and freeze before baking. Add 15 minutes to the bake time if cooking from frozen.
