  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 1/2 cup finely chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 2 cups prepared mashed potatoes (creamy style preferred)
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk (for potatoes, if needed)
  • 2 tablespoons butter (for potatoes, if needed)
  • 1/2 cup ketchup or preferred meatloaf glaze
  • 1/4 cup brown sugar (for glaze)
  • 1 tablespoon apple cider vinegar (for glaze)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, breadcrumbs, 1/4 cup milk, egg, onion, salt, pepper, and Worcestershire sauce. Mix gently with your hands until just combined; do not overmix.
  3. Press the meat mixture evenly into the bottom of the prepared baking dish to form the meatloaf base layer.
  4. Prepare your mashed potatoes. If using pre-made, ensure they are warm and creamy. If making from scratch, prepare them to your preferred consistency, adding the extra 1/4 cup milk and 2 tablespoons butter if necessary for creaminess.
  5. Spread the prepared mashed potatoes evenly over the meatloaf base layer.
  6. In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar to create the glaze. Spread this glaze over the mashed potato layer.
  7. Bake for 35 minutes.
  8. Remove the casserole from the oven. Sprinkle the shredded cheddar cheese evenly over the top.
  9. Return the casserole to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the internal temperature of the meat is safe.
  10. Let the meatloaf casserole rest for 5 minutes before you slice and serve it.

  • For an extra layer of comfort, you can mix 1/2 cup of cooked, crumbled bacon into the mashed potatoes before spreading them over the meat.
