Make this flavorful Mediterranean rice featuring turmeric, cumin, and fresh herbs. It is a simple, fluffy side dish that pairs well with many main courses.

  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain white rice
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 2 1/4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup toasted pine nuts
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the rice, turmeric, and cumin to the saucepan. Stir constantly for 2 minutes to toast the rice and spices.
  4. Pour in the vegetable broth, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15 to 18 minutes, or until all the liquid is absorbed. Do not lift the lid during this time.
  6. Remove the saucepan from the heat and let it stand, covered, for 10 minutes. This step helps the rice steam and become fluffy.
  7. Fluff the rice gently with a fork. Stir in the toasted pine nuts and fresh parsley.
  8. Serve warm as a side dish. This recipe is a great alternative to complex meal planning when you need a quick side.
