1 cup fresh spinach, finely chopped
4 ounces feta cheese, crumbled
1 large egg, lightly beaten
1/4 cup grated Parmesan cheese
1/4 teaspoon dried oregano
1/8 teaspoon black pepper
1/4 cup all-purpose flour
1 sheet frozen puff pastry, thawed according to package directions
1 teaspoon sesame seeds (optional, for topping)
Instructions
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
Heat the olive oil in a small skillet over medium heat. Add the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let the spinach cool slightly. Squeeze out any excess moisture from the spinach.
In a medium bowl, combine the wilted spinach, crumbled feta cheese, beaten egg, Parmesan cheese, oregano, and black pepper. Mix well until combined.
Sprinkle the flour over the mixture and stir until just incorporated. This helps bind the filling.
Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
Place about 1 tablespoon of the spinach and feta mixture onto the center of each pastry square.
Fold the pastry over to form a triangle or a rectangle, pressing the edges firmly to seal. You can crimp the edges with a fork for a decorative look and a secure seal.
Place the sealed crisps onto the prepared baking sheets. Brush the tops lightly with water or a little extra egg wash if desired, and sprinkle with sesame seeds.
Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed, and the filling is hot.
Let the Mediterranean appetizers cool slightly on the baking sheet before serving. Serve warm for the best crunch.
Notes
For extra crispiness, you can lightly brush the tops with melted butter before baking.
If you do not have puff pastry, you can use phyllo dough, but adjust the baking time as phyllo cooks faster.
