Make this homemade Mexican Pizza copycat recipe for a crispy, cheesy dinner that tastes just like the fast-food favorite. You get layers of seasoned ground beef, refried beans, and melted cheese between perfectly crisp tortillas.

  • 10 small flour tortillas
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1 cup water
  • 1 can (16 ounces) refried beans, warmed
  • 1 cup enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • 1 cup diced tomatoes (for topping)
  • 1/2 cup sliced black olives (for topping)
  • 1/4 cup sliced green onions (for topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly brush both sides of the flour tortillas with vegetable oil.
  2. Bake the tortillas directly on the oven rack for 5 to 7 minutes, flipping halfway through, until they are golden brown and crisp. Set aside.
  3. While tortillas bake, cook the ground beef in a skillet over medium heat until browned. Drain off any excess fat.
  4. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.
  5. To assemble the first layer, place one crispy tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla.
  6. Spoon half of the seasoned ground beef over the beans. Sprinkle with half of the shredded cheese.
  7. Top with a second crispy tortilla. Spread the remaining refried beans over this tortilla, followed by the remaining ground beef and cheese.
  8. Pour the enchilada sauce evenly over the top layer of cheese.
  9. Bake for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
  10. Remove from the oven. Top immediately with diced tomatoes, sliced black olives, and sliced green onions.
  11. Slice into wedges and serve your easy Mexican pizza right away.
