Instructions

  1. Prepare the peach filling: In a medium saucepan, combine the diced peaches, lemon juice, cinnamon, granulated sugar, and cornstarch.
  2. Cook the filling over medium heat, stirring occasionally, until the mixture thickens, about 5 to 7 minutes. Remove from heat and let it cool completely.
  3. Assemble the egg rolls: Lay one egg roll wrapper flat on a clean surface with a corner pointing toward you (diamond shape). Place about 2 tablespoons of the cooled peach filling near the bottom corner.
  4. Fold the bottom corner up over the filling. Fold the left and right corners inward over the filling. Moisten the top edge of the wrapper with a little water. Roll the wrapper tightly away from you to seal the egg roll. Repeat with remaining filling and wrappers.

  9. Prepare the cinnamon sugar coating: In a shallow dish, mix the 1/2 cup powdered sugar, 1/4 cup granulated sugar, and 1 teaspoon cinnamon.
  10. While the egg rolls are still warm, toss them gently in the cinnamon sugar mixture until fully coated.
  11. If making the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Serve the warm egg rolls immediately with the glaze for dipping.
