4 large russet potatoes
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup cooked bacon bits
2 tablespoons chopped fresh chives
Sour cream, for serving
Instructions
Preheat your oven to 400°F (200°C).
Wash and scrub the potatoes. Prick each potato several times with a fork.
Bake the potatoes directly on the oven rack for 1 hour, or until tender.
Let the potatoes cool slightly until you can handle them. Cut each potato in half lengthwise.
Scoop out the flesh from each half, leaving about a 1/4-inch border to create a “skin boat.” Reserve the scooped-out potato flesh for another use, like mashed potatoes.
Brush the inside and outside of the potato skins with olive oil. Season with salt and pepper.
Place the potato skins cut-side up on a baking sheet. Bake for another 10-15 minutes, or until the edges are golden brown and crispy.
Remove from the oven. Fill each potato skin with shredded cheddar cheese and bacon bits.
Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
Garnish with fresh chives and serve immediately with sour cream.
Notes
For extra crispy skins, you can brush them with melted butter instead of olive oil before the second bake.
Experiment with different cheeses like Monterey Jack or a cheese blend.
Add other toppings like sour cream, green onions, or pulled pork.
