Make this easy, flavorful salmon dinner on one sheet pan. It cooks quickly and uses simple ingredients for a healthy weeknight meal.

  • 4 (6 ounce) salmon fillets, skin on or off
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, thinly sliced
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for simple cleanup.
  2. Pat the salmon fillets dry with paper towels. Place them on the prepared baking sheet, leaving a little space between each fillet.
  3. In a small bowl, whisk together the melted butter, minced garlic, Italian seasoning, salt, and pepper.
  4. Brush the garlic butter mixture evenly over the top of each salmon fillet.
  5. Arrange two or three thin lemon slices on top of each fillet.
  6. Bake for 12 to 15 minutes, depending on the thickness of your salmon, until the fish flakes easily with a fork.
  7. Remove from the oven. Discard the cooked lemon slices if desired. Sprinkle with fresh parsley before serving.
