Make this creamy, light whipped ricotta dip topped with sweet and spicy hot honey and crunchy toasted walnuts. It is a simple, impressive appetizer perfect for parties or casual snacking.

  • 15 oz whole milk ricotta cheese, drained if watery
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup walnuts, roughly chopped
  • 2 tablespoons hot honey (or regular honey mixed with a pinch of red pepper flakes)
  • Fresh thyme or basil leaves, for garnish
  • Crostini or crusty bread, for serving

Instructions

  1. Drain the ricotta cheese in a fine-mesh sieve set over a bowl for at least 15 minutes to remove excess liquid.
  2. Place the drained ricotta, olive oil, minced garlic, salt, and pepper into a food processor or a stand mixer fitted with the whisk attachment.
  3. Process or whip the mixture on high speed for 3 to 5 minutes until the dip is completely smooth, light, and airy. Scrape down the sides as needed.
  4. While the dip is whipping, toast the walnuts: Place the chopped walnuts in a small, dry skillet over medium heat. Cook, stirring often, for 3 to 5 minutes until fragrant and lightly browned. Remove from heat immediately.
  5. Transfer the whipped ricotta dip to a shallow serving bowl. Spread it slightly to create a well for the topping.
  6. Drizzle the hot honey evenly over the top of the dip.
  7. Sprinkle the toasted walnuts and fresh herb leaves over the honey.
  8. Serve immediately with crostini or crusty bread for dipping.

Notes

  • If you do not have a food processor, you can use a hand mixer, but whipping may take slightly longer to achieve the light texture.
  • For a quick meal planning idea, prepare the dip base a day ahead and store it covered in the refrigerator. Add the toppings just before serving.
  • If you prefer a savory dip without heat, skip the hot honey and top with roasted cherry tomatoes and fresh basil instead.
