Ingredients
Scale
2 large sweet potatoes, peeled and cut into 1-inch cubes
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, toss the sweet potato cubes with the olive oil until they are evenly coated.
In a small bowl, whisk together the honey, cinnamon, salt, pepper, and garlic powder until combined.
Pour the honey mixture over the sweet potatoes and toss gently until every piece is coated with the glaze.
Spread the sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to promote crispiness.
Roast for 20 minutes. Remove the pan and carefully flip the sweet potatoes using a spatula.
Return the pan to the oven and roast for another 10 to 15 minutes, or until the edges are deeply caramelized and the centers are tender when pierced with a fork.
Serve immediately as a delicious side dish for weeknight meals or holiday feasts.
Notes
For extra crunch, add 1/4 cup of chopped pecans during the last 5 minutes of roasting.
If you prefer a savory version, skip the honey and cinnamon, and instead use 1 teaspoon smoked paprika and 1/2 teaspoon onion powder with the olive oil.
To ensure the best caramelization, make sure the sweet potatoes are in a single layer on the baking sheet.
