A make-ahead breakfast casserole perfect for feeding a crowd, featuring layers of bread, savory sausage, eggs, and cheese.

  • 1 pound breakfast sausage
  • 1 loaf (1 pound) day-old bread, cut into 1-inch cubes
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 6 large eggs
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet, cook the breakfast sausage over medium heat until browned. Drain off any excess grease.
  2. In a large bowl, combine the cubed bread, cooked sausage, cheddar cheese, Monterey Jack cheese, chopped onion, and chopped green bell pepper.
  3. In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Pour the egg mixture over the bread and sausage mixture. Gently stir to ensure all ingredients are moistened.
  5. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight, to allow the bread to soak up the egg mixture.
  6. Preheat your oven to 350°F (175°C).
  7. Pour the mixture into a greased 9×13 inch baking dish.
  8. Bake for 45-55 minutes, or until the casserole is set and golden brown on top.
  9. Let stand for 5-10 minutes before serving.
