  • 1 pound breakfast sausage, casing removed
  • 1/4 cup all-purpose flour
  • 2 cups whole milk, warm
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried sage
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 4 large eggs
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Unroll the crescent roll dough and press it into a 12-inch circle on a baking sheet lined with parchment paper. Bake the crust for 8 to 10 minutes until lightly golden. Remove from the oven.
  2. While the crust bakes, prepare the sausage gravy. In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon until it is fully browned. Drain off all but 2 tablespoons of the rendered fat.
  3. Sprinkle the flour over the cooked sausage and stir constantly for 1 minute to cook out the raw flour taste.
  4. Slowly whisk in the warm milk until the mixture is smooth. Continue to cook, stirring often, until the gravy thickens enough to coat the back of a spoon, about 5 to 7 minutes.
  5. Stir in the salt, pepper, and dried sage. Remove the gravy from the heat.
  6. In a separate small skillet, melt the butter over medium heat. Crack the 4 eggs into the skillet and scramble them until they are just set but still slightly moist.
  7. Spread the sausage gravy evenly over the partially baked crescent roll crust, leaving a small border for the edge.
  8. Top the gravy layer with the shredded cheddar and pepper jack cheeses.
  9. Gently place the scrambled eggs over the cheese layer.
  10. Return the pizza to the oven and bake for an additional 5 to 8 minutes, or until the cheese is fully melted and bubbly.
  11. Slice and serve this savory morning meal immediately.
