1 pound bulk pork sausage
8 ounces cream cheese, softened
1 (10 ounce) can Rotel Original Diced Tomatoes and Green Chilies, undrained
1 cup shredded sharp cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup milk (optional, for thinning)
Instructions
Cook the sausage in a large skillet over medium heat until fully browned. Drain off any excess grease.
Reduce the heat to low. Add the softened cream cheese to the skillet with the cooked sausage. Stir until the cream cheese melts and combines smoothly with the sausage.
Stir in the entire can of Rotel, including the liquid. Mix well.
Add the shredded cheddar cheese and Monterey Jack cheese. Continue stirring until all the cheese is melted and the dip is smooth and hot. If the dip seems too thick, add milk one tablespoon at a time until you reach your desired consistency.
Transfer the dip to a serving dish. Serve warm with tortilla chips, crackers, or bread for dipping.
Notes
For a slow cooker version, combine all ingredients except the milk in a small slow cooker. Cook on low for 2 hours or high for 1 hour, stirring occasionally until smooth.
You can substitute regular sausage with spicy Italian sausage for extra heat.
This dip is best served immediately while hot and gooey.
