Make a refreshing and creamy seafood salad that tastes better than store-bought versions. This easy recipe uses simple ingredients and is perfect for a quick lunch or summer gathering.

Ingredients

Scale
  • 1 pound imitation crab meat, shredded
  • 1/2 pound cooked shrimp, chopped
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1/4 teaspoon black pepper
  • 1/4 cup sweet pickle relish
  • 2 hard-boiled eggs, chopped (optional)

Instructions

  1. Prepare the seafood: If using imitation crab, shred it into small pieces. Chop the cooked shrimp into bite-sized pieces. Place both in a large mixing bowl.
  2. Add vegetables: Add the chopped celery and red onion to the seafood mixture.
  3. Make the dressing: In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, and black pepper until smooth.
  4. Combine: Pour the dressing over the seafood and vegetables. Add the sweet pickle relish and chopped hard-boiled eggs, if using.
  5. Mix gently: Fold all ingredients together until everything is evenly coated. Avoid overmixing to keep the texture nice.
  6. Chill: Cover the bowl and refrigerate the seafood salad for at least 30 minutes before serving. This allows the flavors to blend.
  7. Serve: Serve chilled on lettuce, as a sandwich filling, or with crackers.

Notes

  • For a lighter version, substitute half the mayonnaise with plain Greek yogurt.
  • If you prefer a more intense seafood flavor, add a dash of Worcestershire sauce to the dressing.
  • This salad is excellent for meal planning and tastes even better the next day. Consider this when looking at meal planning options.
