You crave classic lasagna flavor but need a fast weeknight dinner. This easy skillet lasagna recipe delivers rich, cheesy comfort using a one-pan method and no-boil noodles, minimizing cleanup and getting dinner ready in about 30 minutes.

  • 1 pound ground beef or Italian sausage
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (24 ounce) jar marinara sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup water
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 9 no-boil lasagna noodles, broken into 2-inch pieces
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 1/4 teaspoon ground nutmeg
  • 2 cups shredded mozzarella cheese

Instructions

  1. Heat the olive oil in a large, deep skillet (10-12 inch) over medium heat. Add the ground beef or sausage and cook until browned. Drain off any excess fat.
  2. Add the chopped onion to the skillet and cook until softened, about 4 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the marinara sauce, diced tomatoes (with liquid), water, oregano, basil, salt, and pepper. Stir to combine. Bring the mixture to a simmer.
  4. Stir in the broken no-boil lasagna noodles, ensuring they are mostly submerged in the sauce. Cover the skillet and reduce the heat to medium-low. Let it simmer for 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.
  5. While the noodles cook, prepare the cheese mixture: In a medium bowl, combine the ricotta cheese, egg, 1/4 cup Parmesan cheese, and nutmeg. Mix well.
  6. Once the noodles are tender, remove the skillet from the heat. Drop spoonfuls of the ricotta mixture evenly over the top of the sauce and noodles.
  7. Sprinkle the mozzarella cheese and extra Parmesan cheese over the ricotta dollops.
  8. Cover the skillet again and let it sit off the heat for 5 minutes. This allows the cheese to melt and the ricotta to set slightly.
  9. Serve immediately. This is a perfect one pot pasta dish for a quick weeknight dinner.
