A hearty and tender beef stew made easily in your slow cooker, perfect for a comforting meal.

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 pound potatoes, peeled and cut into 1-inch chunks
  • 4 carrots, peeled and cut into 1-inch chunks
  • 2 celery stalks, cut into 1-inch chunks
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons cold water (optional, for thickening)

Instructions

  1. Pat the beef cubes dry with paper towels. Season with salt and pepper. Toss the beef with flour until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pan. Remove beef and set aside.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Transfer the onion and garlic mixture to your slow cooker. Add the browned beef, beef broth, Worcestershire sauce, thyme, and rosemary. Stir to combine.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
  6. Add the potatoes, carrots, and celery to the slow cooker. Stir, cover, and cook for another 1-2 hours on low, or until the vegetables are tender.
  7. If you prefer a thicker stew, whisk together cornstarch and cold water in a small bowl. Stir this mixture into the slow cooker during the last 30 minutes of cooking.
  8. Taste and adjust seasoning if needed before serving.

  • Serve hot with crusty bread for dipping.
  • This stew is excellent for meal planning and can be refrigerated or frozen for later.
  • For a richer flavor, you can sear the beef in a Dutch oven before transferring to the slow cooker.
