- 1 pound boneless, skinless chicken breasts or thighs
- 8 cups chicken broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 6 ounces egg noodles
- 2 tablespoons chopped fresh parsley (optional)
- Place chicken in the slow cooker.
- Add chicken broth, carrots, celery, onion, garlic, salt, pepper, thyme, and rosemary.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Remove chicken from the slow cooker and shred it with two forks.
- Return shredded chicken to the slow cooker.
- Stir in the egg noodles and cook for an additional 20-30 minutes, or until noodles are tender.
- Stir in fresh parsley, if using.
- Serve hot.
