A comforting and simple slow cooker chicken noodle soup recipe, perfect for a cozy meal.

Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs
  • 8 cups chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 6 ounces egg noodles
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Place chicken in the slow cooker.
  2. Add chicken broth, carrots, celery, onion, garlic, salt, pepper, thyme, and rosemary.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  4. Remove chicken from the slow cooker and shred it with two forks.
  5. Return shredded chicken to the slow cooker.
  6. Stir in the egg noodles and cook for an additional 20-30 minutes, or until noodles are tender.
  7. Stir in fresh parsley, if using.
  8. Serve hot.

Notes

  • This soup is great for meal planning and can be made ahead.
  • For a richer broth, you can add a bay leaf while cooking.
  • Adjust seasonings to your preference.
