2 pounds beef sirloin or flank steak, cut into 1-inch strips
1 large green bell pepper, sliced
1 large red bell pepper, sliced
1 large yellow onion, sliced
1/2 cup low-sodium soy sauce
1/4 cup beef broth
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon ground ginger
1/2 teaspoon garlic powder
2 tablespoons cornstarch
3 tablespoons cold water
Cooked white rice, for serving
Instructions
Place the steak strips, green pepper, red pepper, and onion into the basin of your slow cooker.
In a separate bowl, whisk together the soy sauce, beef broth, brown sugar, Worcestershire sauce, ginger, and garlic powder. Pour this mixture over the steak and vegetables.
Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the steak is very tender.
About 30 minutes before serving, prepare a cornstarch slurry by whisking the cornstarch and cold water together in a small bowl until smooth.
Stir the slurry into the slow cooker mixture. Cover and cook on HIGH for the remaining 30 minutes, or until the sauce has thickened.
Serve the savory beef and peppers immediately over hot white rice.
Notes
For extra flavor, you can sear the steak strips briefly in a hot skillet before adding them to the slow cooker.
If you prefer a stronger oriental beef flavor, add 1 teaspoon of sesame oil with the wet ingredients.
