3–4 lb boneless pork shoulder (Boston butt)
1 tablespoon smoked paprika
2 teaspoons brown sugar
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (optional)
1 cup BBQ sauce
1/4 cup water or chicken broth
1 tablespoon apple cider vinegar
Instructions
Trim excess fat from the pork shoulder, but leave some for moisture.
In a small bowl, combine smoked paprika, brown sugar, salt, black pepper, garlic powder, onion powder, and cayenne pepper (if using). This is your spice rub.
Rub the spice mixture all over the pork shoulder.
Place the seasoned pork shoulder in your slow cooker.
In a separate bowl, whisk together the BBQ sauce, water or broth, and apple cider vinegar. Pour this mixture over the pork.
Cover the slow cooker and cook on low for 8-10 hours or on high for 4-5 hours, until the pork is tender and easily shreds with a fork.
Remove the pork from the slow cooker and place it on a cutting board or in a large bowl.
Using two forks, shred the pork.
Skim any excess fat from the cooking liquid in the slow cooker.
Return the shredded pork to the slow cooker and toss with some of the reserved cooking liquid and additional BBQ sauce, if desired, until coated and moist.
For crispy bits, you can spread the shredded pork on a baking sheet and broil for a few minutes until the edges are slightly browned.
Serve your pulled pork on buns with your favorite toppings.
Notes
For a deeper flavor, you can add a splash of liquid smoke to the BBQ sauce mixture.
This pulled pork is excellent for meal planning and can be stored in the refrigerator for up to 4 days or frozen for longer storage.
