1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1/2 cup pure maple syrup
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon maple extract (optional, for stronger flavor)
1 cup powdered sugar (for glaze)
2 tablespoons pure maple syrup (for glaze)
1 tablespoon milk or cream (for glaze)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper leaving an overhang for easy removal.
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set this dry mixture aside.
In a large bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
Beat in the eggs one at a time, mixing well after each addition.
Mix in the 1/2 cup of maple syrup, 1/2 cup of milk, vanilla extract, and maple extract (if using) until just combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the batter.
Spread the batter evenly into the prepared baking pan.
Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. The bars should be lightly golden.
Let the bars cool in the pan for 10 minutes before lifting them out using the parchment overhang. Transfer to a wire rack to cool completely.
While the bars cool, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons of maple syrup, and 1 tablespoon of milk until smooth. Add more milk, a half teaspoon at a time, if the glaze is too thick.
Once the bars are completely cool, drizzle or spread the sweet maple glaze evenly over the top. Cut into bars or sticks before serving.
Notes
For a stronger maple taste in the cake itself, substitute 1 tablespoon of the milk with extra maple syrup.
If you prefer a thicker glaze, use less milk when mixing. If you want a thinner glaze that drips down the sides, add a touch more milk.
You can dust the warm bars with cinnamon sugar before glazing for an extra layer of flavor.
