A juicy, oven-baked chicken breast filled with a creamy spinach and Parmesan mixture. This recipe is perfect for an easy weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the chopped spinach, cream cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined.
  3. Carefully cut a pocket into the thickest side of each chicken breast using a sharp knife. Be careful not to cut all the way through.
  4. Stuff each chicken breast pocket evenly with the spinach and cheese mixture.
  5. Secure the opening of each chicken breast with toothpicks to prevent the filling from leaking out.
  6. Drizzle the chicken breasts with olive oil and season with additional salt and pepper if desired.
  7. Place the stuffed chicken breasts in a baking dish.
  8. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for a few minutes before serving. Remove toothpicks before serving.

  • For extra flavor, you can add a pinch of nutmeg to the spinach filling.
