Ingredients
Scale
12 large eggs
1/2 cup mayonnaise
1 teaspoon yellow mustard
1/4 teaspoon paprika, plus more for dusting
Salt and black pepper to taste
Black olives, sliced (for spider bodies)
Chives or thinly sliced green onions (for spider legs)
Optional garnishes: red bell pepper strips (for horns), avocado or green food coloring (for green filling)
Instructions
Place eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes. Drain and rinse with cold water. Peel the eggs.
Cut each egg in half lengthwise. Scoop the yolks into a medium bowl.
Mash the yolks with a fork until smooth. Add mayonnaise, mustard, paprika, salt, and pepper. Mix until well combined and creamy.
If desired, stir in avocado or green food coloring to achieve an eerie green hue.
Spoon or pipe the yolk mixture back into the egg white halves.
Decorate the deviled eggs to create spooky designs. For spiders, place a sliced black olive on top of each deviled egg and arrange chives or green onion slices as legs. Add red pepper horns or other creative garnishes as desired.
Dust lightly with additional paprika for a blood-like effect.
Arrange on a platter and serve.
Notes
For a smoother filling, you can press the mashed yolks through a fine-mesh sieve before mixing with other ingredients.
Chilling the deviled eggs for at least 30 minutes before serving allows the flavors to meld.
Consider using a piping bag with a star tip for a more decorative presentation of the filling.
