  • 24 white mushrooms, stems removed and reserved
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped yellow onion
  • 2 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
  2. Finely chop the reserved mushroom stems.
  3. Heat olive oil in a skillet over medium heat. Add the chopped mushroom stems and onion, and cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant. Remove from heat and let cool slightly.
  5. In a medium bowl, combine the softened cream cheese, Parmesan cheese, chopped parsley, salt, and pepper. Stir in the cooled mushroom and onion mixture.
  6. Spoon the filling evenly into the mushroom caps.
  7. Top each stuffed mushroom with a sprinkle of breadcrumbs.
  8. Place the stuffed mushrooms on the prepared baking sheet.
  9. Bake for 20-25 minutes, or until the mushrooms are tender and the topping is golden brown.
  10. Serve warm.

Notes

  • For a make-ahead option, prepare the stuffed mushrooms up to the baking step and refrigerate. Bake just before serving, adding a few extra minutes to the baking time.
  • You can substitute other herbs like chives or thyme for parsley.
  • Consider adding a pinch of red pepper flakes to the filling for a touch of heat.
