Make this easy, flavorful sweet corn chicken rice bowl for a satisfying weeknight dinner or a simple lunch. It combines tender chicken, sweet corn, and savory sauce over fluffy rice.

Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen or fresh sweet corn kernels
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup chicken broth
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 2 cups cooked white or brown rice
  • 2 green onions, sliced, for garnish
  • 1 teaspoon sesame seeds, for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the cut chicken pieces to the skillet. Season with salt and pepper. Cook until the chicken is browned on all sides and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add the sweet corn kernels. Cook for 2 minutes until slightly tender.
  4. In a small bowl, whisk together the soy sauce, chicken broth, honey, rice vinegar, ginger, and minced garlic to create the sauce.
  5. Pour the sauce mixture into the skillet with the corn. Bring the sauce to a simmer and cook for 1 to 2 minutes, stirring constantly, until the sauce thickens slightly.
  6. Return the cooked chicken to the skillet. Toss to coat the chicken and corn evenly with the sauce. Cook for 1 minute to heat through.
  7. To assemble your **one bowl chicken and rice meal**, divide the cooked rice into serving bowls.
  8. Spoon the sweet corn chicken mixture over the rice in each bowl.
  9. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • For an **Asian inspired chicken rice bowl**, add 1/2 teaspoon of sesame oil to the sauce mixture.
  • You can substitute chicken thighs for breasts if you prefer a richer flavor.
  • This recipe works well for **meal prep chicken rice bowl**; store the rice and chicken mixture separately and combine just before eating.
