1 cup all-purpose flour
1 cup yellow cornmeal
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup mashed cooked sweet potato (about 1 large sweet potato)
1/2 cup buttermilk
1/4 cup unsalted butter, melted, plus more for greasing
1 large egg
1/4 cup honey (for batter)
For Honey Butter:
4 tablespoons unsalted butter, softened
2 tablespoons honey
1/4 teaspoon vanilla extract
Instructions
Preheat your oven to 375 degrees F. Grease an 8×8 inch baking pan or line it with parchment paper.
In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
In a separate medium bowl, combine the mashed sweet potato, buttermilk, melted butter, egg, and 1/4 cup honey. Mix until just combined.
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until the batter is just mixed. Do not overmix; a few lumps are fine.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
While the cornbread bakes, prepare the honey butter. In a small bowl, beat the softened butter, 2 tablespoons of honey, and vanilla extract until light and fluffy.
Remove the cornbread from the oven and let it cool in the pan for 5 minutes.
Spread the prepared honey butter evenly over the warm cornbread.
Cut into squares and serve warm.
Notes
For the best flavor, use fresh sweet potatoes cooked until very soft, then mash them completely smooth.
If you do not have buttermilk, mix 1/2 cup of regular milk with 1/2 teaspoon of white vinegar or lemon juice and let it sit for 5 minutes before using.
