A hearty and cheesy breakfast casserole layered with crispy tater tots, savory sausage, and fluffy eggs. Perfect for weekend brunches or make-ahead meals.

  • 1 pound breakfast sausage
  • 1 dozen large eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 cups shredded cheddar cheese, divided
  • 1 (16 ounce) package frozen tater tots
  • Optional: 1/2 cup chopped onion, 1/2 cup chopped bell pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the breakfast sausage in a skillet over medium heat until browned. Drain off any excess grease. If using, add chopped onion and bell pepper during the last few minutes of cooking the sausage.
  3. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
  4. Stir in 1 cup of the shredded cheddar cheese and the cooked sausage mixture.
  5. Pour the egg and sausage mixture evenly over the bottom of a 9×13 inch baking dish.
  6. Arrange the frozen tater tots in a single layer over the egg mixture.
  7. Sprinkle the remaining 1 cup of cheddar cheese over the tater tots.
  8. Bake for 30-40 minutes, or until the eggs are set and the tater tots are golden brown and crispy. If the tots are browning too quickly, you can loosely tent the dish with foil.
  9. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

  • To keep tater tots crispy, ensure they are in a single layer and bake uncovered for most of the cooking time.
  • For a make-ahead option, assemble the casserole (without baking) and refrigerate overnight. Add a few extra minutes to the baking time.
  • This casserole reheats well. Cover and reheat in the oven or microwave.
