- 1 teaspoon baking powder
- ½ teaspoon salt
- 4 large eggs, separated
- 1 cup granulated sugar
- ½ cup milk
- 1 teaspoon vanilla extract
- For the Milk Soak:
- 1 (14 ounce) can sweetened condensed milk
- 1 (12 ounce) can evaporated milk
- ½ cup whole milk
- For the Topping:
- 1 ½ cups heavy whipping cream
- ½ cup powdered sugar
- ½ teaspoon vanilla extract
- Ground cinnamon, for dusting
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the egg yolks and granulated sugar until pale and fluffy.
- Beat in the ½ cup milk and 1 teaspoon vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- While the cake is baking, prepare the milk soak by whisking together the sweetened condensed milk, evaporated milk, and ½ cup whole milk in a bowl.
- Once the cake is out of the oven, poke holes all over the top with a fork or skewer.
- Slowly pour the milk soak mixture over the warm cake, allowing it to absorb.
- Let the cake cool completely, then cover and refrigerate for at least 4 hours, or preferably overnight.
- Before serving, whip the heavy cream with the powdered sugar and ½ teaspoon vanilla extract until stiff peaks form.
- Spread the whipped cream evenly over the chilled cake.
- Dust generously with ground cinnamon.

- You can make this cake a day ahead, which allows the flavors to meld.
