  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 cups buttermilk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Butter or oil for the griddle

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. This dry mix is key to your fluffy pancake success.
  2. In a separate medium bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients. Gently mix them together with a whisk or spatula until just combined. Do not overmix; a few lumps in the batter are fine. Overmixing develops gluten, which results in tough pancakes.
  4. Let the batter rest for 5 to 10 minutes. This allows the leavening agents to activate, making your pancakes taller.
  5. Heat a large griddle or non-stick skillet over medium-low heat. Lightly grease the surface with butter or oil. The lower heat helps the pancakes cook through before the outside burns, allowing them to rise higher.
  6. Pour 1/3 cup of batter onto the hot griddle for each pancake. Do not crowd the pan.
  7. Cook for 3 to 4 minutes, or until bubbles form on the surface and the edges look set.
  8. Flip the pancakes carefully and cook for another 2 to 3 minutes until golden brown and cooked through. For extra height, you can place a lid over the pan for the last minute of cooking on the second side.
  9. Serve immediately stacked high with your favorite toppings.

Notes

  • For the thickest pancakes, use cold buttermilk. The temperature difference between the cold liquid and the warm griddle helps create lift.
  • Do not press down on the pancakes with your spatula after flipping; this deflates them.
