  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth

  • 1/2 cup milk or heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the uncooked rice and cook for 2 minutes, stirring constantly, until the edges of the grains look slightly translucent.
  5. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 to 20 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  7. Remove the saucepan from the heat. Stir in the milk or cream.
  8. Add the shredded cheddar cheese and grated Parmesan cheese. Stir gently until the cheese is fully melted and the rice is creamy.
