  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped

  • 1 teaspoon black pepper
  • 1 teaspoon onion powder

Instructions

  1. Remove the prime rib roast from the refrigerator 2-3 hours before cooking to allow it to come closer to room temperature.
  2. Preheat your oven to 500°F (260°C).
  3. In a small bowl, combine the minced garlic, rosemary, thyme, salt, pepper, and onion powder to make the herb rub.
  4. Rub the entire surface of the prime rib roast with olive oil.
  5. Press the herb mixture firmly onto all sides of the roast.
  6. Place the roast, fat side up, on a rack in a shallow roasting pan.
  7. Roast at 500°F (260°C) for 15 minutes.
  8. Reduce the oven temperature to 325°F (160°C). Do not open the oven door.
  9. Continue roasting until the internal temperature reaches 125°F (52°C) for rare, or 130°F (54°C) for medium-rare. Use a meat thermometer for accuracy. This usually takes about 13-15 minutes per pound at this lower temperature.
  10. Remove the roast from the oven when it reaches the desired temperature.
  11. Tent the roast loosely with foil and let it rest for at least 20 minutes before carving. The internal temperature will rise during resting.
